The red drum, Sciaenops ocellatus, which belongs to the croaker or drum family, sciaendae, is a popular food and sport fish in the southern USA.  Its popularity as a seafood became national in the USA with Paul Prudhomme's blackened redfish recipe.  Soon there wasn't enough redfish to satisfy demand and State and Federal officials had to restrict the harvest.
This red drum was sold at Fulton Fish Market in New York City on 21 August 1992.
