The standard of European retail fish markets continues to improve. Each country has its seafood specialties, which often reflect historic fisheries. The Dutch have their salted herring and smoked eel and the Spanish love their hake. In the last few years there has been an increase in the variety and quantity of farmed fish for sale. European retail fish markets began selling farmed rainbow trout and salmon many years ago. Now many contintental retail fish markets sell farmed tilapia and Vietnamese catfish as well.
Gent, Belgium (Ghent in English) has a large square called the Vrijdag Markt. On Fridays vendors arrive and set up stalls to sell a large assortment of items including antiques, clothing and food. Several seafood vendors open up trailers to reveal large fish and shellfish displays. Vishandel Janssens had the most attractive and modern seafood display. Photographed on 11 August 2006.
